  • 1 cup uncooked ziti
  • 1/2 cup uncooked lentils
  • 1 can (14.5-ounce) diced tomatoes
  • 1/4 cup tomato paste
  • 1 tablespoon olive oil
  • 1-2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh cilantro
  • Salt to taste


1. Preheat oven to 350°F. Bring a large pot of salted water to a boil. Add the ziti and cook according to package instructions. Drain and set aside.

2. In a medium saucepan, heat the olive oil over medium heat. Add the garlic and cook for 1 minute, stirring often. Add the lentils and cook for another minute.

3. Add the diced tomatoes, tomato paste, oregano, cumin, chipotle powder, and black pepper. Simmer for 10 minutes, stirring occasionally. Add salt to taste.

4. Place the cooked ziti in a 9×13-inch baking dish. Pour the sauce over the ziti and stir to combine. Sprinkle with cilantro.

5. Bake for 20 minutes, or until the top is lightly browned and bubbling. Serve hot.
