Ingredients

  • 3 large portobello mushrooms
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil

  • Salt and pepper, to taste
  • 1 can butter beans, drained and rinsed
  • 1 tablespoon olive oil

  • 1 tablespoon vegan butter

Preparation

Portobello Steaks

In a large bowl, combine the minced garlic, olive oil, thyme, rosemary, salt, and pepper. Add the portobello mushrooms and stir to coat. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes.

Preheat a grill or grill pan over medium-high heat. Grill the portobello mushrooms for 4 minutes per side, or until they are tender and lightly charred.

Butter Bean Mash

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently. Add the butter beans, thyme, rosemary, salt, and pepper. Cook for 5 minutes, stirring occasionally, until the beans are tender.

Transfer the bean mixture to a food processor or blender. Add the vegan butter and process until smooth and creamy. Serve the butter bean mash with the portobello steaks.
