Ingredients
- 1 cup wild rice
- 1 large sweet potato, peeled and diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup frozen sweet corn
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice
Preparation
Begin by preparing the wild rice. Bring 2 cups of water to a boil in a medium saucepan. Add the wild rice and reduce the heat to low. Simmer, covered, for 30 minutes. Drain any excess water and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened. Add the diced sweet potato and cook for 5 minutes, stirring occasionally. Add the smoked paprika, cumin, coriander, salt, and pepper and cook for an additional 2 minutes.
Add the frozen corn and peas to the skillet and cook for 3 minutes, stirring occasionally. Add the cooked wild rice and stir to combine. Cook for 5 minutes, stirring occasionally. Add the chopped parsley and lemon juice and stir to combine. Taste and adjust seasoning if needed.
