Vegetable and Tofu Stir Fry

Ingredients
- 1 block firm tofu, diced into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup mushrooms, sliced
- 1 cup broccoli, chopped
- 1 cup carrots, sliced
- 1 teaspoon ginger, minced
- 1 teaspoon sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 scallions, sliced
Preparation
Start by heating 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add in the diced tofu and cook for 3-4 minutes until lightly golden brown. Remove the tofu from the pan and set aside.
Add the remaining tablespoon of olive oil to the skillet and add in the diced onion. Sauté the onion for 3-4 minutes until it begins to soften. Then add the garlic, bell peppers, mushrooms, and broccoli to the pan and sauté for an additional 5 minutes until the vegetables are tender-crisp. Add the carrots, ginger, sesame oil, soy sauce, rice vinegar, brown sugar, and red pepper flakes to the pan and stir to combine.
Return the tofu to the skillet and stir to combine. Cook for an additional 2-3 minutes until the tofu is heated through and the sauce has thickened. Season with salt and pepper, to taste.
To serve, divide the stir fry among four plates. Top with scallions and serve hot. Enjoy!
