Ingredients
- 1 cup of cooked lentils
- 2 potatoes, peeled and grated
- 1 onion, finely chopped

- 1 teaspoon of ground coriander
- 1 teaspoon of smoked paprika
- 1 tablespoon of chopped parsley
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- 2 tomatoes, diced
- 1 red pepper, diced
- 1 cucumber, diced
- 1 avocado, mashed
- 1 lime, juiced
- 1 tablespoon of chopped coriander
Preparation
To make the veggie fingers, start by combining the cooked lentils, grated potatoes, chopped onion, garlic, cumin, ground coriander, smoked paprika, and parsley in a bowl. Season with salt and pepper, and mix everything together with your hands until it forms a dough. Divide the dough into 12 equal portions, and shape each portion into a finger-like shape.
Heat the olive oil in a large non-stick pan over medium heat. Add the veggie fingers to the pan and cook for about 5 minutes on each side, or until golden and crispy. Transfer the veggie fingers to a plate lined with kitchen paper to absorb any excess oil.
To make the salad, combine the diced tomatoes, red pepper, and cucumber in a bowl. Season with salt and pepper, and mix everything together. To make the guacamole, mash the avocado with a fork in a bowl. Add the lime juice, chopped coriander, and a pinch of salt and pepper. Mix everything together until smooth.
