This Vegetarian Burrito Bowl with Avocado Crema is a delicious and simple meal that is sure to please! Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 cup of cooked quinoa
  • 1 cup of cooked brown rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup of frozen corn, thawed
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of diced red onion
  • 1/4 cup of fresh lime juice
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 avocado, diced
  • 1/4 cup of plain Greek yogurt

Preparation

First, preheat the oven to 375°F (190°C).

Next, in a large bowl, combine the black beans, quinoa, rice, bell peppers, corn, cilantro, red onion, lime juice, olive oil, and salt and pepper. Mix until everything is evenly distributed. Spread the mixture onto a baking sheet in an even layer and bake in the preheated oven for 25 minutes, stirring halfway through.

While the burrito bowl is baking, make the avocado crema. In a medium bowl, combine the diced avocado, Greek yogurt, and a pinch of salt and pepper. Mash with a fork until everything is combined and creamy. Cover and refrigerate until ready to use.

When the burrito bowl is done baking, remove from the oven and let cool for 5 minutes before serving. Divide the burrito bowl mixture between four bowls and top with the avocado crema. Enjoy!
