Ingredients

  • 1 cup hazelnuts, toasted and chopped
  • 2 cups cubed bread (use vegan-friendly bread)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 apples, diced
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon thyme
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1/4 cup vegetable broth

Preparation

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

Spread the hazelnuts on the prepared baking sheet and bake for 8-10 minutes, or until lightly toasted. Allow to cool, then roughly chop them.

Place the cubed bread on the baking sheet and bake for 8-10 minutes, or until lightly toasted. Allow to cool.

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the apples and cook for an additional 5 minutes.

Add the sage, thyme, nutmeg, black pepper, and salt. Stir to combine and cook for an additional 1-2 minutes.

Add the toasted hazelnuts and cubed bread to the skillet and stir to combine. Pour in the vegetable broth and stir to combine. Cook for an additional 2-3 minutes, until the bread absorbs the broth.

Transfer the mixture to a greased baking dish and bake for 20 minutes, or until lightly browned. Serve warm.
