Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 1 cup mushrooms, diced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Preparation
In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce the heat to low and simmer for about 15 minutes, until the quinoa is tender and the liquid is absorbed. Remove from heat and set aside.
In a large skillet over medium heat, heat the olive oil. Add the onion and cook for 3-4 minutes, until softened. Add the mushrooms and bell pepper and cook for another 5 minutes, stirring occasionally. Add the diced tomatoes, garlic powder, smoked paprika, oregano, basil, salt, and black pepper. Simmer for 10 minutes, until the vegetables are tender and the sauce has thickened. Add the cooked quinoa and stir to combine.
Transfer the mixture to a serving dish and top with the chopped parsley. Serve warm and enjoy!
