Vegan Tagalong Cookies are a delicious vegan take on the classic peanut butter-based cookie. These vegan cookies are made with a crunchy graham cracker-style cookie base, topped with a layer of vegan peanut butter, and then finished off with a layer of vegan chocolate. If you’ve ever had the classic Tagalong cookie, then you know that it’s a classic combination of crunchy cookie, creamy peanut butter, and smooth chocolate. These Vegan Tagalong Cookies recreate that same classic taste and texture, but with vegan ingredients. The cookie base is made with a combination of vegan graham-style crackers, vegan butter, sugar, and a touch of cinnamon. The peanut butter layer is made with vegan peanut butter, and the chocolate layer is made with vegan chocolate chips. It’s the perfect veganized version of a classic cookie.
- 5 vegan graham-style crackers
- 3 tablespoons vegan butter
- 1/4 cup light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup vegan peanut butter
- 1/2 cup vegan chocolate chips
Start by preheating your oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a food processor, add the vegan graham-style crackers and pulse until you have fine crumbs. Add the vegan butter, light brown sugar, and ground cinnamon and pulse until combined. The mixture should be crumbly and hold together when pressed.
Using a medium cookie scoop or a tablespoon, scoop the cookie dough onto the prepared baking sheet. Use your fingers to press the cookie dough into a round disk, about 1/4-inch thick. Bake the cookies for 12-14 minutes, until lightly golden brown. Let cool completely on the baking sheet.
Once the cookies have cooled, spread a generous layer of vegan peanut butter on top of each cookie. Place the vegan chocolate chips in a microwave-safe bowl and heat in 15 second intervals, stirring in between, until the chocolate is melted and smooth. Spoon the melted chocolate over the peanut butter layer of each cookie. Let the chocolate set, about 15-20 minutes.
