These vegan strawberry sugar cookies are a delicious and unique twist on the classic sugar cookie. The vegan cookies are a combination of sweet and tart, with the addition of fresh strawberries, dark chocolate chips, and fragrant lavender. Ingredients

  • 1 cup vegan butter, softened
  • 1 cup granulated sugar
  • 2 tablespoons flaxseed meal
  • 6 tablespoons water
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup fresh strawberries, finely chopped
  • 1/2 cup vegan dark chocolate chips
  • 1 tablespoon dried lavender buds

Preparation

Preheat the oven to 350°F and line two baking sheets with parchment paper.

In a large bowl, use a hand mixer to cream together the vegan butter and sugar until light and fluffy. In a small bowl, mix together the flaxseed meal and water and let it sit for 5 minutes to thicken. Add the flax mixture and vanilla to the butter and sugar and mix until combined.

In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Fold in the strawberries, chocolate chips, and lavender buds.

Using a cookie scoop, scoop out the cookie dough onto the prepared baking sheets, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden brown. Cool the cookies on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
