Vegan Pumpkin Muffins

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup vegan butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract


1. Preheat oven to 350°F (175°C). Line a muffin tin with muffin liners or spray it with non-stick cooking spray.

2. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, allspice, and salt. Set aside.

3. In a large bowl, whisk together the pumpkin puree, melted vegan butter, brown sugar, maple syrup, and vanilla extract. Whisk until completely combined and smooth.

4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.

5. Fill the muffin tin with the batter. The batter should make about 12 muffins. Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

6. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
