  • 1 cup cooked lentils
  • 1 cup diced mushrooms
  • 1/2 cup chopped walnuts
  • 1/4 cup breadcrumbs
  • 2 tablespoons vegan mayonnaise
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 2 tablespoons olive oil
  • 1 cup grated raw beets
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper


1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.

2. In a food processor, combine the lentils, mushrooms, walnuts, breadcrumbs, vegan mayonnaise, nutritional yeast, garlic powder, onion powder, smoked paprika, black pepper, and sea salt. Pulse until the mixture is combined but still has some texture.

3. Scoop the mixture onto the prepared baking sheet and shape into four burger patties. Brush the patties with the olive oil and bake for 25 minutes, or until golden and cooked through.

4. Meanwhile, prepare the beet slaw. In a medium bowl, combine the grated beets, vegan mayonnaise, lemon juice, horseradish, Dijon mustard, sea salt, and black pepper. Mix until combined.

5. When the burgers are done, assemble the burgers. Place a burger patty on a bun, top with the beet slaw and horseradish sauce, and serve. Enjoy!
