Ingredients

  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 2 1/2 cups vegan dark chocolate chips

Preparation

Begin by making the peanut butter filling. In a medium bowl, stir together the peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until all the ingredients are incorporated. Place the bowl in the refrigerator and let chill for 30 minutes.

Next, prepare the chocolate coating. Place the vegan dark chocolate chips in a heat-safe bowl and melt in the microwave, stirring every 30 seconds until completely melted and smooth. Alternatively, you can melt the chocolate over a double boiler.

Take a teaspoon of the chilled peanut butter mixture and roll into a ball. Dip the peanut butter ball into the melted chocolate and use two forks to roll it around until completely coated. Place the egg on a parchment-lined baking sheet and repeat with the remaining peanut butter balls.

Once all the eggs are coated, place the baking sheet in the refrigerator and let chill for at least 1 hour or until the eggs have hardened. Enjoy!
