This vegan peach galette is a delicious way to enjoy summer’s sweetest fruit. This vegan version utilizes store-bought vegan puff pastry and non-dairy substitutes. Whether you’re a vegan or just looking for a delicious dessert, this vegan peach galette is sure to satisfy.

Ingredients:

  • 1 sheet vegan puff pastry, thawed
  • 3-4 ripe peaches, sliced
  • 2 tablespoons coconut sugar
  • 2 tablespoons vegan butter, melted
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon vegan cream cheese

Preparation:

Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.

Unfold the puff pastry onto a lightly floured surface. Using a rolling pin, roll the pastry into a 12-inch circle. Carefully transfer the pastry to the prepared baking sheet.

In a medium bowl, combine the sliced peaches, coconut sugar, melted vegan butter, ground cinnamon, cornstarch, and lemon juice. Stir until the peaches are evenly coated. Arrange the peaches in the center of the pastry, leaving a 2-inch border. Gently fold the edges of the pastry over the peaches, pleating as necessary.

In a small bowl, combine the vegan cream cheese and 2 tablespoons of water. Stir until smooth. Brush the cream cheese mixture onto the edges of the pastry. Bake for 25-30 minutes, or until the pastry is golden brown and the peaches are tender.

Remove from the oven and let cool slightly before serving. Enjoy with a scoop of vegan ice cream or a dollop of vegan whipped cream. Enjoy!
