Ingredients
- 1 cup cooked brown or green lentils
- 2 cups finely chopped mushrooms
- 1/2 cup breadcrumbs
- 1/4 cup nutritional yeast
- 1/4 cup freshly chopped parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil, plus more for pan-frying
Preparation
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, combine the cooked lentils, mushrooms, breadcrumbs, nutritional yeast, parsley, garlic powder, onion powder, oregano, salt, and pepper. Stir until everything is evenly combined.
3. Add the olive oil and mix until everything is evenly coated. Use your hands to form the mixture into small balls.
4. Line a baking sheet with parchment paper or a silicone baking mat. Place the balls on the sheet and bake for 25 minutes. The meatballs should be golden brown.
5. For a more crispy texture, heat a few tablespoons of olive oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, for 4-5 minutes until they are golden brown and crispy.
