Vegan Kebabs

Vegan kebabs are a delicious, healthy, and cruelty-free alternative to traditional meat-based kebabs. They are easy to make, and can be cooked up in no time. The combination of hearty vegetables, flavorful spices, and vegan-friendly sauces make these kebabs a great way to enjoy a quick and flavorful meal.

  • 1 red onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • 1 zucchini, diced
  • 1 cup of mushrooms, diced
  • 1 cup of vegan-friendly BBQ sauce
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon of olive oil
  • 4-8 wooden skewers

Begin by preheating your oven to 375 degrees Fahrenheit.

In a large bowl, combine the diced onion, peppers, zucchini, mushrooms, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Mix until everything is evenly coated.

Next, take your wooden skewers and thread the vegetables onto them, alternating between vegetables to create an interesting pattern.

Place the kebabs onto a non-stick baking sheet and drizzle with olive oil. Bake in the preheated oven for 15-20 minutes, or until the vegetables are tender and lightly browned.

Remove the kebabs from the oven and serve hot with your favorite vegan-friendly sides. Enjoy!
