Ingredients
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup of mushrooms, sliced
- 2 cups of vegetable broth
- 2 tablespoons of tomato paste
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Preparation
Begin by heating the olive oil in a large pot over medium heat. Once the oil is hot, add the onion and garlic and sauté for 3-4 minutes, or until they are fragrant and beginning to soften. Next, add the carrots and potatoes and sauté for another 3-4 minutes, or until the vegetables are lightly browned and beginning to soften. Then add the mushrooms and sauté for 2-3 minutes, or until they are softened.
Now add the vegetable broth, tomato paste, oregano, basil, thyme, salt, and pepper to the pot and stir until the ingredients are well combined. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-30 minutes, or until the vegetables are tender. Taste and adjust the seasoning as needed.
