Vegan Goulash

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon ground cumin
  • 2 carrots, diced
  • 1 cup of mushrooms, diced
  • 2 potatoes, diced
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 1 cup of cooked chickpeas, drained and rinsed
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Preparation

Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper and garlic and cook until softened, about 5 minutes.

Add the paprika and cumin and cook for another minute. Add the carrots, mushrooms, potatoes and diced tomatoes and stir to combine. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes, or until the vegetables are tender.

Add the chickpeas and simmer for another 5 minutes. Add the chopped parsley and season with salt and pepper to taste. Serve the vegan goulash hot with a side of your favourite bread or rice. Enjoy!
