Vegan & Gluten Free Pumpkin Muffins

These delicious vegan and gluten free pumpkin muffins are the perfect morning treat. Soft, moist, and perfectly spiced, they are a great way to start your day. The pumpkin puree and spices give them a wonderful flavor and the vegan and gluten free ingredients mean that everyone can enjoy them.


  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1/4 cup applesauce
  • 1/4 cup vegetable oil
  • 1 1/2 cups gluten free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1/2 cup dairy free milk


Preheat the oven to 350°F. Grease a 12-cup muffin tin or line with paper liners.

In a large bowl, mix together the pumpkin puree, coconut sugar, applesauce, and vegetable oil until combined. In a separate bowl, whisk together the gluten free all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, cloves, allspice, and salt.

Add the dry ingredients to the wet ingredients and mix until just combined. Slowly add in the dairy free milk, stirring until the batter comes together.

Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake for 20-25 minutes, until the muffins are golden brown and a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Enjoy!
