Vegan Gluten-free Lemon Donuts
These Vegan Gluten-free Lemon Donuts are soft, fluffy and full of zesty lemon flavor. They are made with simple ingredients that are both vegan and gluten-free friendly. - 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons coconut sugar
- 2 tablespoons coconut oil, melted
- 1/2 cup plant-based milk (e.g. almond milk)
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- Optional topping: Coconut sugar and lemon zest
Preheat oven to 350°F and lightly grease a donut pan with coconut oil.
In a medium bowl, whisk together almond flour, coconut flour, baking powder, salt, and coconut sugar.
In a separate bowl, whisk together melted coconut oil, plant-based milk, vanilla extract, lemon juice, and lemon zest.
Pour wet ingredients into dry ingredients and mix until combined. The batter should be thick and slightly sticky.
Spoon batter into the donut pan, filling each cavity about 3/4 full. Bake for 15 minutes or until golden brown.
Allow donuts to cool for 10 minutes before gently popping them out of the pan. Top with coconut sugar and lemon zest, if desired.
