Vegan Gingerbread Cookies

Vegan gingerbread cookies are a delicious and festive treat that can be enjoyed by everyone, regardless of dietary preference. They are incredibly easy to make, and can be customized with different spices and decorations to suit your taste. These vegan gingerbread cookies have a classic gingerbread flavor with a hint of spice, and they’re perfect for Christmas, Hanukkah, or any other holiday celebration.


  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 3/4 cup dark brown sugar
  • 1/3 cup molasses
  • 2 tablespoons non-dairy milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar for rolling


Preheat the oven to 350°F and line two baking sheets with parchment paper. In a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

In a medium bowl, cream together the vegan butter and dark brown sugar with an electric mixer until light and fluffy. Add in the molasses, non-dairy milk, and vanilla extract and mix until combined. Slowly add the wet ingredients to the dry ingredients and mix until a dough forms.

Divide the dough into two equal portions and roll each into a log about 1 ½ inches in diameter. Wrap each log in plastic wrap and chill in the refrigerator for at least 30 minutes.

Once the dough has chilled, remove one of the logs from the refrigerator and roll it out onto a lightly floured surface until it is about 1/4 inch thick. Use a gingerbread man cookie cutter, or your desired cookie cutter, to cut out the shapes. Place the cookies onto the prepared baking sheets. Repeat with the remaining log of dough.

Bake the cookies for 8-10 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Once cooled, roll the cookies in the granulated sugar and decorate with icing, sprinkles, or other desired decorations. Enjoy!
