Vegan French Silk Pie

Ingredients
- 1/2 cup pitted dates
- 1/2 cup walnuts
- 2 tablespoons vegan butter
- 1/2 cup vegan white chocolate chips
- 1/4 cup vegan cream cheese
- 1/4 cup coconut cream
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup vegan dark chocolate chips
- 1/4 cup aquafaba (chickpea brine)
- 2 tablespoons vegan sugar
- 1/2 teaspoon cream of tartar
Preparation
Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch pie dish with vegan butter.
In a food processor, combine the dates and walnuts and process until they form a fine crumb. Add the vegan butter and process until well combined. Press the mixture into the prepared pie dish and bake for 10-15 minutes, or until lightly golden. Set aside to cool.
In a small saucepan, combine the white chocolate chips, vegan cream cheese, coconut cream, maple syrup, vanilla extract, and sea salt. Heat over medium-low heat, stirring constantly, until the mixture is smooth and creamy. Pour the mixture into the prepared pie crust and spread evenly. Refrigerate for at least 2 hours, or until set.
In a small bowl, combine the vegan dark chocolate chips and aquafaba. Heat in the microwave in 30-second intervals, stirring between each, until the chocolate is melted and the mixture is smooth. Spread the mixture over the top of the pie. Place in the refrigerator to set for at least 1 hour.
In a medium bowl, combine the aquafaba, vegan sugar, and cream of tartar. Beat on high speed with an electric mixer until stiff peaks form. Spread the meringue over the top of the pie and use a spatula to create peaks and valleys. Place the pie back in the refrigerator to chill until ready to serve.
Serve chilled, topped with chocolate shavings or extra vegan dark chocolate chips, if desired. Enjoy!
