Vegan Feta Pasta
This vegan feta pasta dish is a delicious vegan twist on the classic Greek dish. It is made with vegan feta cheese and is packed with flavour from fresh herbs, garlic, and a zesty lemon dressing. Ingredients
- 1 block of extra-firm tofu
- 1/4 cup of olive oil
- 3 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 teaspoon of dried thyme
- 2 tablespoons of nutritional yeast
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1/4 cup of freshly squeezed lemon juice
- 1/4 cup of vegan mayonnaise
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh basil
- 8 ounces of dry pasta of your choice
Preparation
Begin by pressing the tofu with a few paper towels to remove excess moisture. Cut the tofu into small cubes and set aside. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute, stirring constantly. Add the cubed tofu and cook for 8-10 minutes, stirring occasionally, until the tofu is golden brown. Add the oregano, thyme, nutritional yeast, salt, and pepper, and stir to combine. Cook for an additional 2 minutes, stirring constantly.
In a small bowl, whisk together the lemon juice, vegan mayonnaise, parsley, and basil. Set aside.
Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta and return it to the pot. Add the cooked tofu mixture, the lemon dressing, and the cooked pasta. Stir to combine. Serve the vegan feta pasta warm.
