Ingredients:

  • ½ cup mashed cooked chickpeas
  • ¼ cup vegan mayonnaise
  • 2 tablespoons vegan cream cheese
  • 1 teaspoon dijon mustard
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 slices of toasted bread of your choice
  • Your choice of vegetables, for topping (e.g. lettuce, tomato, cucumber, etc.)

Preparation:

1. In a medium bowl, mash the cooked chickpeas until they are mostly broken down.

2. Add in the vegan mayonnaise, vegan cream cheese, dijon mustard, onion powder, garlic powder, smoked paprika, and a pinch of salt and pepper. Mix everything together until it is well combined.

3. Toast the bread of your choice.

4. Spread the vegan egg salad mixture on the toasted bread.

5. Add your desired vegetables on top of the vegan egg salad.

6. Put the other piece of toasted bread on top of the vegetables and enjoy your vegan egg salad sandwich!
