These vegan chorizo and potato tacos are a quick and tasty way to enjoy a Mexican-inspired meal. With flavorful vegan chorizo and potatoes, they are sure to be a hit with the whole family. Ingredients

  • 1 package vegan chorizo
  • 2 potatoes, peeled and diced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8-10 soft tacos
  • Optional toppings: vegan cheese, diced avocado, diced tomatoes, salsa, vegan sour cream, etc.

Preparation

1. Preheat a large skillet over medium-high heat. Add the vegan chorizo and cook for 5-7 minutes, until it is browned and cooked through. Use a spoon to break up the chorizo as it cooks.

2. Remove the chorizo from the skillet and set aside. Add the potatoes, onion, and bell pepper to the skillet. Drizzle with the olive oil and season with the garlic powder, chili powder, and salt and pepper. Cook for 8-10 minutes, stirring occasionally, until the vegetables are lightly browned and cooked through.

3. Return the chorizo to the skillet and stir to combine. Cook for another 3-4 minutes, until everything is heated through.

4. Heat the tacos according to package instructions. Fill the tacos with the chorizo and potato mixture and top with your favorite vegan toppings. Enjoy!
