Ingredients
- 1/2 cup vegan butter
- 1/2 cup coconut sugar
- 1/4 cup almond milk
- 1/4 cup vegan dark chocolate chips
- 1 teaspoon peppermint extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup all-purpose gluten-free flour
- 1/2 cup vegan dark chocolate chips for rolling
- 1/4 cup vegan white chocolate chips for rolling (optional)
Preparation
Preheat oven to 350°F and line a baking sheet with parchment paper. In a large bowl, cream together vegan butter and coconut sugar until light and fluffy. Add almond milk, vegan dark chocolate chips, peppermint extract, baking powder, and salt, and mix until combined. Gradually add gluten-free flour and mix until a soft dough forms. If the dough is too wet, add a little more flour. If the dough is too dry, add a little more almond milk.
Using a cookie scoop or tablespoon, scoop out dough and roll into balls. Place on the prepared baking sheet. Place vegan dark chocolate chips and vegan white chocolate chips in a shallow bowl and roll each cookie dough ball in the chips until completely coated. Place back on the baking sheet.
Bake for 10-12 minutes, until edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
