- 1 teaspoon pure vanilla extract
- 2 pears, peeled, cored and diced
- 1/2 cup vegan chocolate chips
- 1/4 cup hazelnuts, chopped
Preparation
Preheat the oven to 350°F. Line a 9×9 inch baking pan with parchment paper and set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, cardamom, cloves, nutmeg, and salt. Set aside.
In a large bowl, whisk together the coconut oil, almond milk, coconut sugar, maple syrup, and vanilla extract until combined. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the pears.
Pour the batter into the prepared baking pan and spread evenly. Sprinkle the vegan chocolate chips and hazelnuts over the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before glazing.
To make the glaze, melt the vegan chocolate chips in a double boiler or in the microwave. Stir in the chopped hazelnuts and mix until combined. Drizzle the glaze over the cooled cake and let set before serving. Enjoy!
