Ingredients

  • 1 cup vegan butter
  • 1 cup light brown sugar
  • 2 tablespoons maple syrup
  • 2 teaspoons ground chai tea
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 3 cups rolled oats
  • 1 cup unsweetened coconut flakes

Preparation

Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.

In a large bowl, beat together the vegan butter and light brown sugar until creamy. Add the maple syrup and mix until combined. Add the ground chai tea and mix to combine.

In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, cardamom, and cloves. Add the flour mixture to the butter mixture and mix until just combined. Add the rolled oats and coconut flakes and mix until combined.

Using a small cookie scoop or tablespoon, scoop the cookie dough onto the prepared baking sheets. Flatten the cookies slightly with the back of a spoon. Bake for 10 minutes, or until the edges are golden brown. Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
