Ingredients
- 1 head of cauliflower (cut into florets)
- 2 tablespoons of olive oil
- 1 tablespoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of nutritional yeast
- 1 cup of vegetable broth
- 2 tablespoons of tomato paste
- 1/2 cup of vegan cream cheese
- 1/4 cup of vegan cheddar cheese
- 1/4 cup of vegan mozzarella cheese
- Salt and pepper to taste
Preparation
Preheat the oven to 400°F (200°C). Place the cauliflower florets on a baking sheet and drizzle with olive oil. Sprinkle with garlic powder, onion powder, smoked paprika, chili powder, and cumin. Toss to coat the cauliflower evenly. Bake for 25 minutes, or until the cauliflower is tender and lightly browned.
In a medium saucepan, heat the vegetable broth over medium-high heat. Add the tomato paste and whisk until combined. Simmer for 5 minutes. Add the vegan cream cheese, cheddar cheese, and mozzarella cheese. Whisk until melted and combined. Reduce the heat to low and simmer for another 5 minutes.
Add the roasted cauliflower to the saucepan and stir to combine. Simmer for 5 more minutes. Add the nutritional yeast and season with salt and pepper to taste. Simmer for 5 more minutes.
Serve the vegan queso immediately with tortilla chips, crackers, or vegetables. Enjoy!
