Vegan Brookies Recipe

Vegan Brookies are a delicious combination of two classic desserts: brownies and cookies. With a fudgy brownie bottom topped with a soft and chewy cookie layer, it’s a treat that’s hard to resist. Ingredients

For the brownie layer:

  • 1 cup vegan butter, melted
  • 1 1/2 cups all-purpose flour
  • 2 cups vegan dark chocolate chips
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup almond milk

For the cookie layer:

  • 1/2 cup vegan butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips

Preparation

Preheat oven to 350°F. Grease a 9×13 inch baking dish with vegan butter.

In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.

In a large bowl, mix together melted vegan butter, sugars, and vanilla extract. Gradually add in the dry ingredients, mixing until just combined. Pour in the almond milk and mix until a thick batter forms.

Spread the batter evenly into the prepared baking dish. Sprinkle vegan chocolate chips over the top of the brownie layer.

In a medium bowl, mix together melted vegan butter, sugars, and vanilla extract. Gradually add in the dry ingredients, mixing until a thick dough forms. Stir in vegan chocolate chips.

Drop spoonfuls of the cookie dough over the top of the brownie layer. Spread the dough evenly over the top.

Bake for 25-30 minutes, or until the top is golden brown and the brownie layer is set. Allow to cool before cutting into bars.
