These vegan BBQ beet kimchi sliders are the perfect summertime treat.   • 2 large beets, peeled and cut into 1/2-inch pieces
  • 1/4 cup vegan barbecue sauce
  • 1/4 cup kimchi, chopped
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 6 slider buns


Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the beet pieces on the baking sheet and drizzle with the olive oil. Sprinkle with the garlic powder, smoked paprika, and sea salt. Toss to coat. Roast the beets for 25-30 minutes, or until tender and caramelized.

In a medium bowl, combine the vegan barbecue sauce and kimchi. Mix until combined. Add the roasted beets and toss to coat. To assemble the sliders, place a few spoonfuls of the beet mixture onto the slider buns. Serve warm.
