Ingredients

  • 2 large apples, cored and diced
  • 2 tablespoons vegan butter
  • 1 teaspoon ground cinnamon
  • 6 ounces vegan cream cheese, at room temperature
  • 4 ounces vegan sour cream
  • 1/2 cup vegan milk
  • 1/2 cup vegan sugar
  • 1 teaspoon vanilla extract
  • 6 egg whites
  • 1/4 teaspoon cream of tartar

Preparation

Preheat oven to 350 degrees F. Grease an 8-inch round baking dish with vegan butter.

In a medium skillet, melt the vegan butter over medium-low heat. Add the diced apples and cinnamon, and cook until the apples are tender, about 5 minutes. Remove from heat and set aside.

In a medium bowl, combine the vegan cream cheese, vegan sour cream, vegan milk, vegan sugar, and vanilla extract. Beat until smooth. Add the cooked apples to the mixture and stir to combine. Pour the mixture into the prepared baking dish.

In a separate bowl, beat the egg whites with an electric mixer on high speed until foamy. Add in the cream of tartar and continue to beat until the egg whites form stiff peaks. Gently fold the egg whites into the apple mixture until just combined.

Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the center is set. Let cool before serving.
