Ingredients
- 1 block firm tofu
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons fresh parsley, chopped
- 1/4 cup red onion, diced
- 1/4 cup black olives, chopped
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Preparation
Begin by preheating your oven to 375 degrees Fahrenheit. Cut the tofu into cubes and place them on a baking sheet. Drizzle with olive oil and soy sauce and season with garlic, salt, and pepper. Bake in the preheated oven for 25 minutes, flipping the cubes halfway through.
While the tofu is baking, dice the tomatoes and red onion, and chop the parsley and olives. Place all the ingredients in a large bowl and add the balsamic vinegar; mix until everything is well combined. Once the tofu is done baking, add it to the bowl and mix again.
Tofu and tomato salad is best served cold, so chill in the refrigerator for at least an hour before serving. This dish can be enjoyed as a side or as a main, with some crusty bread or a side of grains. Enjoy!
