This Thai-Style Tofu or Tempeh with Pineapple and Vegetables is a delicious and flavorful vegan dish that is perfect for dinner or lunch. Ingredients

  • 8 ounces firm or extra-firm tofu or tempeh, cut into cubes
  • 1 tablespoon olive oil
  • 1 bell pepper, cut into strips
  • 1 onion, sliced
  • 1 cup cubed fresh pineapple
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon red curry paste
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 1/2 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Preparation

Heat the olive oil in a large skillet over medium-high heat. Add the tofu or tempeh cubes and cook until lightly browned, about 5 minutes. Add the bell pepper and onion and cook for an additional 2 minutes.

Add the pineapple, garlic, and ginger and cook for another 2 minutes. Add the red curry paste and stir to combine. Pour in the vegetable broth, soy sauce, and brown sugar and bring to a simmer. Reduce the heat to low and simmer for about 10 minutes, stirring occasionally.

Stir in the coconut milk and cilantro and season to taste with salt and pepper. Simmer for an additional 5 minutes. Serve the tofu or tempeh with pineapple and vegetables over steamed rice and enjoy!
