Sweet Potato Pasta with Vegan Walnut Cream Sauce

This vegan and vegetarian pasta dish is an incredibly flavorful and comforting meal. The sweet potato noodles are cooked al dente and tossed in a creamy walnut sauce that is made with a blend of cashew cream and walnuts. Combined with garlic, onion, and fresh herbs, this meal will definitely leave you satisfied!


  • 1 package of sweet potato noodles
  • 1/2 cup cashew cream
  • 1/2 cup toasted walnuts
  • 1/4 cup vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1/2 onion, diced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste


Begin by heating a large skillet over medium-high heat. Add the olive oil and onion and sauté until the onion is softened and lightly golden. Add the garlic and sauté for an additional minute. Then, add the vegetable broth, cashew cream, walnuts, thyme, rosemary, and salt and pepper to the skillet and stir to combine. Bring the mixture to a gentle simmer and cook for 3-4 minutes, stirring occasionally, until the sauce has thickened slightly.

Meanwhile, bring a large pot of salted water to a boil and add the sweet potato noodles. Cook according to package instructions, usually about 5-7 minutes. When the noodles are tender, drain and add them to the skillet with the sauce. Stir the noodles to coat them in the sauce and cook for 2-3 minutes, stirring occasionally.

When the noodles are cooked, divide them among bowls and serve with a sprinkle of fresh herbs and a bit of cracked black pepper. Enjoy!
