Ingredients
- 2 large sweet potatoes
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- 1 avocado, peeled, pitted, and mashed
Preparation
Preheat the oven to 375 degrees F and lightly grease a baking sheet.
In a medium bowl, whisk together the flour, baking powder, salt, pepper, and nutmeg. In a separate bowl, mash the sweet potatoes with the olive oil, lime juice, and cilantro. Add the mashed sweet potatoes to the flour mixture and stir until combined.
