Vegetarian Sushi Platter Recipe
Sushi is one of the most popular Japanese dishes. It’s made with vinegared rice and various other ingredients, including vegetables, seafood, and sometimes even meat. But a vegetarian sushi platter can be just as delicious and flavorful as non-vegetarian versions. This vegetarian sushi platter recipe is easy to make, full of flavor, and best of all, it’s vegetarian-friendly!
Ingredients
To make a vegetarian sushi platter, you will need the following ingredients:
- 3 cups of cooked short-grain sushi rice
- 2 tablespoons of rice vinegar
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 tablespoon of toasted sesame seeds
- 1 sheet of nori
- 1/2 cup of cooked edamame beans
- 1/2 cup of cubed avocado
- 1/2 cup of shredded carrots
- 1/2 cup of cucumber slices
- 1/4 cup of pickled ginger
- 1/4 cup of pickled radish
- Soy sauce, for dipping
Preparation
To prepare the sushi platter, start by making the sushi rice. In a medium saucepan, combine the sushi rice, 2 cups of water, and 1 teaspoon of salt. Bring the mixture to a boil, reduce the heat to low, and cover the pan. Simmer for 15 minutes, or until the rice is tender. Remove from the heat and let cool.
In a small bowl, combine the rice vinegar, sugar, and 1 teaspoon of salt. Stir until the sugar and salt have dissolved. Pour the mixture over the cooked sushi rice and stir to combine. Sprinkle the toasted sesame seeds over the top and stir to combine. Set aside.
To assemble the sushi platter, lay a sheet of nori on a flat surface. Spread the sushi rice over the nori, leaving a 1/2-inch border around the edges. Arrange the edamame beans, avocado cubes, carrots, cucumber slices, pickled ginger, and pickled radish on top of the sushi rice. Roll up the nori and sushi rice to form a roll. Cut the roll into 1-inch slices and arrange them on a platter.
Serve the sushi platter with soy sauce for dipping. Enjoy!
