Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 3 vegan sausages, sliced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili flakes
- 2 tablespoons tomato paste
- 2 cups cooked lentils
- 1 cup vegetable broth
- 2 tablespoons vegan Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Preparation
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the vegan sausage slices and cook until lightly browned, about 5 minutes.
Add the cumin, smoked paprika, and chili flakes and stir to combine. Cook for 1 minute. Add the tomato paste and stir to combine. Cook for 1 minute.
Add the cooked lentils, vegetable broth, vegan Worcestershire sauce, salt, and pepper and stir to combine. Bring to a simmer and cook for 10 minutes.
Stir in the fresh parsley and cook for an additional 5 minutes. Serve warm.
