Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 avocado, peeled and diced
- 1 cucumber, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper, to taste
Preparation
Begin by preheating your oven to 375°F. While the oven is preheating, prepare the chickpeas, avocado, and cucumber. Drain and rinse the can of chickpeas, and then spread them out on a paper towel to dry. Peel the avocado and dice it into small cubes. Peel the cucumber and then dice it into small cubes. Once all of the ingredients are prepared, place them in a medium-sized bowl. Add in the olive oil, garlic powder, onion powder, chili powder, paprika, cumin, salt, and pepper. Mix everything together until all of the ingredients are evenly coated in the spices.
Line a baking sheet with parchment paper and then spread the chickpea mixture out evenly. Place the baking sheet in the preheated oven and bake for 25 minutes. After 25 minutes, remove the baking sheet from the oven and let the chickpea mixture cool. Once the chickpea mixture has cooled, form the mixture into small balls or bites.
