Ingredients
- 1 can (15 oz) white beans, rinsed and drained
- 3 large carrots, peeled and chopped
- 3 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Preparation
1. Preheat oven to 400°F.
2. Line a baking sheet with parchment paper. Place the carrots on the baking sheet and season with salt and pepper. Bake in preheated oven for 20 minutes or until soft. Remove from oven and let cool.
3. In a food processor, combine the white beans, roasted carrots, garlic, olive oil, lemon juice, smoked paprika, and cumin. Process until smooth and creamy.
