Ingredients
- 3 tablespoons olive oil
- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 sweet potatoes, diced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups vegetable broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 2 tablespoons bacon-flavored liquid smoke
Preparation
Heat the olive oil in a large pot over medium heat. Add the onion, celery, carrots, and garlic and sauté until the vegetables are softened and lightly browned, about 7 minutes. Add the sweet potatoes, smoked paprika, salt, and pepper, and cook for 2 minutes, stirring frequently.
Add the vegetable broth, diced tomatoes, and black-eyed peas to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes. Add the bacon-flavored liquid smoke and stir to combine.
Remove the pot from the heat and let the soup cool for 10 minutes. Use an immersion blender to blend the soup until it is smooth. Return the pot to low heat and simmer for an additional 10 minutes. Serve the soup hot, with your favorite toppings such as croutons, cheese, or sour cream.
