Ingredients

  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon white miso paste
  • 1 teaspoon chili flakes
  • 2 carrots, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup mushrooms, sliced
  • 4 ounces ramen noodles (preferably whole wheat or brown rice noodles)
  • 2 green onions, thinly sliced
  • 2 tablespoons sesame seeds

Preparation

1. In a large pot, bring the vegetable broth to a boil over medium-high heat. Add the garlic, ginger, soy sauce, sesame oil, miso paste, and chili flakes and stir to combine. Reduce the heat to low and simmer for 5 minutes.

2. Add the carrots, bell pepper, and mushrooms and simmer for 10 minutes, or until the vegetables are tender. Taste the broth and add additional soy sauce or sesame oil, if desired.

3. Meanwhile, cook the ramen noodles according to the package directions. Drain and rinse with cold water.

4. To serve, divide the noodles among 4 bowls. Ladle the broth and vegetables over the noodles and top with green onions and sesame seeds.
