This simple pea + potato curry is a vegan and vegetarian-friendly dish full of flavor and easy to make. It’s a one-pot dish that doesn’t require long cooking times, making it a great mid-week meal for when time is short. The combination of peas and potatoes creates a rich and creamy texture, and the spices add a delicious depth of flavor. Serve this curry with some freshly cooked basmati rice, naan bread, or chapatis for a delicious and comforting meal.

Ingredients

  • 1 tablespoon of vegetable oil
  • 1 large onion, finely diced
  • 2 cloves of garlic, crushed
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of garam masala
  • 1 teaspoon of turmeric
  • 2 large potatoes, peeled and diced
  • 1 cup of frozen peas
  • 1 cup of vegetable stock
  • 1 can of coconut milk
  • Salt and pepper, to taste
  • Fresh coriander, to garnish

Preparation

Start by heating the oil in a large saucepan over a medium heat. Once the oil is hot, add the onion and garlic and fry until softened, about 3-4 minutes. Add the spices and fry for a minute more.

Now add the diced potatoes and frozen peas and stir to combine. Pour in the vegetable stock and coconut milk, season with salt and pepper, and bring the mixture to a boil. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the potatoes are tender.

Once the potatoes are cooked, taste the curry and adjust the seasoning as necessary. Serve the curry hot with freshly cooked basmati rice, naan bread, or chapatis, and garnish with fresh coriander.
