  • 1 cup raw cashews
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup vegan cream cheese


Begin by combining the cashews and water in a high-speed blender. Blend on high until the mixture is completely smooth. Add in the nutritional yeast, lemon juice, olive oil, salt, garlic powder, onion powder, and black pepper. Blend again until everything is well combined and the mixture is smooth and creamy.

Next, transfer the mixture to a medium pot and heat over medium-low heat, stirring constantly. Cook for about 5 minutes, or until the mixture begins to thicken. Then, add in the vegan cream cheese and continue to cook and stir for about another 5 minutes, or until the mixture is thick and creamy.

Once the mixture has thickened, remove the pot from the heat and let cool slightly. Then, transfer the mixture to a parchment-lined 8×8 baking dish and spread it out evenly. Place the dish in the refrigerator and let chill for at least 2 hours, or until firm.

Once the cheese has chilled and set, use a knife or spatula to cut it into small cubes. Then, use your hands to shred the cheese into a mozzarella-like texture. The cheese can now be used in your favorite recipes or stored in an airtight container in the refrigerator for up to 4 days.
