Shaved Fennel Salad
This flavorful and light Shaved Fennel Salad is the perfect way to liven up any meal. Fennel is a crunchy, mild vegetable with a subtle anise flavor. Ingredients
- 2 bulbs fennel
- 1 cucumber, sliced
- 1 red bell pepper, julienned
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup sliced almonds
- 1/4 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper, to taste
Preparation
Begin by preparing the fennel. Cut the top off of the fennel and discard the stem. Slice the fennel in half lengthwise and cut out the core. Using a mandolin or a sharp knife, thinly slice the fennel into thin strips. Place the shaved fennel in a large bowl.
Next, prepare the vegetables. Slice the cucumbers into thin rounds and place in the bowl with the fennel. Slice the red bell pepper into thin strips and add to the bowl. Halve the cherry tomatoes and add them to the bowl.
Chop the parsley and mint and add to the bowl. Toss to combine. Sprinkle the sliced almonds over the top of the salad.
In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, salt and pepper. Drizzle the vinaigrette over the salad and toss to combine. Serve immediately.
