  • 1 cup vital wheat gluten
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon ground black pepper
  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup cold water


Start by preheating your oven to 375 degrees Fahrenheit. In a bowl, mix together the vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, oregano, thyme, and ground black pepper. Set aside.

In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, apple cider vinegar, and cold water. Add the wet ingredients to the dry ingredients and mix until everything is combined and a dough is formed. Knead for a few minutes until the dough is firm and elastic.

Once the dough has been kneaded, shape it into a log about 1 inch thick. Place the log on a parchment-lined baking sheet and bake for 40 minutes. Remove from the oven and let cool for 15 minutes.

Once the log has cooled, use a sharp knife to slice into 1/4-inch thick slices. Place the slices in a medium-sized skillet over medium heat. Cook for 3-4 minutes per side, or until they are lightly browned and crispy. Serve hot with your favorite toppings and condiments.
