Vegetarian Spinach Lasagna

This delicious and hearty Vegetarian Spinach Lasagna is the perfect meal for a cozy night in. Layers of fresh lasagna noodles, creamy ricotta cheese, and spinach are combined with marinara sauce and mozzarella cheese for a comforting dish that will leave you feeling full and satisfied. The combination of flavors and textures makes this dish a winner and a favorite among vegetarians and meat-eaters alike.

Ingredients

  • 1 package lasagna noodles
  • 1 container (15 oz) ricotta cheese
  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 jar (24 oz) marinara sauce
  • 1 cup shredded mozzarella cheese

Preparation

Preheat the oven to 375°F. Grease a 9×13 inch baking dish with cooking spray.

Bring a large pot of salted water to a boil and cook the lasagna noodles according to package instructions. Drain and rinse with cold water to stop the cooking process, then set aside.

In a medium bowl, mix together the ricotta cheese, spinach, garlic powder, onion powder, oregano, salt, and pepper. Set aside.

Spread a layer of marinara sauce in the bottom of the prepared baking dish. Top with a layer of cooked lasagna noodles. Spread the ricotta cheese mixture over the noodles. Top with another layer of lasagna noodles. Spread the remaining marinara sauce over the noodles. Sprinkle with the mozzarella cheese.

Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly. Let cool for 10 minutes before slicing and serving.
