Ingredients
- 4 large potatoes, peeled and thinly sliced
- 1/4 cup vegan butter
- 1/4 cup all-purpose flour
- 1 cup almond milk
- 1 cup vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup nutritional yeast
- 1/4 cup vegan Parmesan cheese (optional)
Preparation
Preheat the oven to 375°F (190°C). Lightly grease an 8×8-inch (20×20 cm) baking dish.
Arrange the potato slices in the prepared baking dish. Set aside.
In a medium saucepan, melt the vegan butter over medium heat. Whisk in the flour and cook, stirring constantly, for 1 minute. Slowly whisk in the almond milk, vegetable broth, garlic, Italian seasoning, salt, and pepper. Bring to a simmer and cook, stirring frequently, until the sauce thickens, about 5 minutes.
Remove the saucepan from the heat and stir in the nutritional yeast and vegan Parmesan cheese (if using). Pour the sauce over the potatoes in the baking dish, making sure to cover all of the potatoes.
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Let cool for 10 minutes before serving. Enjoy!
