Roasted Vegetable Pizza with Cauliflower Alfredo Sauce

This roasted vegetable pizza is an easy to make, healthy dinner that everyone in the family will love. The pizza is loaded with delicious roasted vegetables, topped with a creamy cauliflower Alfredo sauce. It’s a vegetarian dish that can easily be made vegan by omitting the cheese. This pizza is sure to be a hit with everyone.


  • 1 store-bought pizza dough
  • 2 cups of assorted vegetables (such as red peppers, mushrooms, zucchini, onions)
  • 3 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 cup of shredded cheese (optional)
  • 1 head of cauliflower, chopped
  • 2 cloves of garlic, minced
  • 1/2 cup of vegetable broth
  • 1/4 cup of nutritional yeast


Preheat your oven to 425 degrees Fahrenheit. Roll out the pizza dough on a lightly floured surface. Place the dough on a parchment-lined baking sheet and set aside.

Chop the vegetables into bite-sized pieces and place in a large bowl. Add the olive oil, salt, and pepper and stir to combine. Spread the vegetables out onto the pizza dough, leaving a 1-inch border. Bake in the preheated oven for 15 minutes.

While the pizza is baking, make the cauliflower Alfredo sauce. Place the cauliflower, garlic, and vegetable broth in a large saucepan and bring to a boil. Reduce the heat to medium and simmer for 10 minutes, until the cauliflower is tender. Using a slotted spoon, transfer the cauliflower to a blender or food processor. Add the nutritional yeast and blend until smooth. Adjust the seasonings to taste.

Remove the pizza from the oven and spread the cauliflower Alfredo sauce over the top. Sprinkle with shredded cheese, if desired. Bake for an additional 10 minutes. Remove from the oven and let cool before slicing.
