Ingredients
- 1 large eggplant, cut into 1-inch cubes
- 2 tablespoons sesame oil

Preparation
Preheat the oven to 375°F. Place the eggplant cubes on a baking sheet lined with foil. Drizzle the sesame oil over the eggplant and season with salt and pepper. Roast for 25 minutes, stirring occasionally, until the eggplant is tender and slightly browned.
